Once the more exotic joints have been cut and dressed from a side of venison and other products, there is still a tremendous amount of meat left on the remaining joints. Diced mixed game meat (approx 450g on a tray)
The diced meat is the ideal beginning to making casseroles or stews and perhaps, if baking is your forte, a game pie. Perfect winter comfort food - I wonder what Nigella Lawson would think!
