Cheddar Cheese is a hard cheese. Available in white and red, it has profiles ranging typically from mild to full flavour including medium mature, mature and extra mature. Vegetarian cheddar is also available.

Taste A good clean taste is characteristic of this cheese. It is free from all objectionable odours and taints
 
Appearance Free from foreign matter and surface blemishes. No mottling acceptable.
Texture Good firm body and a close well knit consistency
Packaging Available in 2.5kg, 5kg and 20kg blocks or prepacked to customer requirements. It is also obtainable in grated (100g - 5kg packs), sliced and diced form
 
 
Storage Store the product under chilled and dry conditions. Cheese should not be exposed to direct sunlight or strong odours
 
Transport For a typical short sea/inland transport journeys a 20/40 foot semi insulated container holding 20/22 tonne loads. For longer journeys butter should be moved in refrigerated 20/40 foot containers or in conventional refrigerated vessels.
 
 
 
Shelf Life Typically 3-6 months for cheese blocks and 40-70 days for sliced, diced and grated cheese when stored under the appropriate chilled conditions
 
Applications Cheddar cheese is suitable for table use and for a wide variety of food ingredient applications including bakery, confectionery and other convenience food products. Suitable for cutting, slicing and grating
